Pasta from the Pixar movie Luca: Trenette al Pesto

Variation made a little more simple (or try the original!)

This recipe has been tried and tested by LAEF children tk-5th grade and even those who "don't eat anything green" or "don't like cheese" or "don't like pesto" aka "the sauce" - found that they indeed do!
"Are there seconds?!! – You might want to make a double batch!
This recipe is inspired by the Pixar film, "Luca". Although we simplified using a recipe only for pesto (omitting the potato and green beans), you can go for the full recipe, or keep things simply pesto Genovese. Both options are included here. Pixar Luca Trenette al Pesto

Pesto Genovese
Makes about 1 1/2 cups
Time: 10 minutes
Ingredients:
4 cups packed basil, blanched briefly in boiling water and shocked in ice water
1⁄2 cup extra-virgin olive oil
1⁄2 cup finely grated parmesan
1⁄4 cup pine nuts
3 tbsp. finely grated pecorino
2 cloves garlic, finely choppedJuice of one small lemon
Coarse sea salt, to taste
Instructions
Process basil, oil, parmesan, pine nuts, pecorino, and garlic in a food processor, or blender (you can also use a mortar and pestle) until smooth; season with salt to taste.
Be sure to reserve a little pasta water to make it all come together!
